Iron Fish Distillery has some delicious local maple syrup, from the Griner Family Sugar Bush, that was aged in used whiskey barrels for months. Those whiskey barrels were then filled with a high rye bourbon and left to marry. Subtly sweet and deep. As the leaves began to fall, and Iron Fish waited for their distilled whiskey, they came upon this spirit made with a blend of corn, rye, and malted barley in fired American oak barrels. They fell for it and gave it a trace of maple by finishing the spirit in old, withered whiskey barrels steeped in their neighbors, the Griner family's, maple syrup.
